Warm Weather

Posted in General, Tips & Hints on January 26, 2012 by HomeBrewWest

Winter Beer Weather

Make use of the remaining warm weather and get those winter beers on the go (Stouts, Dark Ales, Ales and Bitters) this weather is perfect for the warmer fermenting beer yeasts used in Stout and Ales production!
There are two types of Winter Beer yeast available your English Safale S-06, (brings out your Earthy aromatics and fuller bodies characteristics) and your American US-05 (creates a cleaner crisper flavour with rounded pallet) they both have prized qualities that make them ideal for winter beer production.

Hoegaarden Wheat Beer!

Posted in General, Tips & Hints on December 4, 2011 by HomeBrewWest

Hoegaarden
(German Wheat Beer)

Ingredients:
Black Rock Whispering Wheat Beer Kit
1kg Copper Tun Light Dried Wheat Malt
15g Crushed Coriander Seeds
2Tbls Orange Peel Zest
SafBrew WB-06

Method.
1. Mix the Wheat Malt, the Coriander and Orange Peel with 2L of Boiling water in a Sauce Pan. Reduce Heat and Simmer for 15minutes. Rest for 15mins and Strain.

2. Add about 10 litres of cold water to your fermenter and then add the hot ingredients Including the Beer Can from step one. Once mixed add cold and hot water to get to the 21L mark making sure the Wert is between 16C – 24C. Make sure the temrature is not hotter than 24C.

3. Pour the SafBrew WB-06 Yeast into the Wert and stir just enough to make it all sink below the surface. Take an SG reading. Put the lid on and Half fill the airlock with water.

4. Leave in the Fermenter in a cool place about 18-20C (definitley lower than 20C). Until it stops bubbling should take 7-10 days

5. Use the Hydrometer to check the SG to confirm it is ready for bottling. The SG should be stable for atleast 2days. You do not need to add Finings before bottling as this is supposed to be a cloudy beer.

6. Sterilize about 30 (640-820ml) bottles and put 2 Carbonation Drops in each one (or a Large measure of Sugar). If you are using small bottles you will need about 50 with 1 Carbonation drop (or a small Scoop of Sugar). (There is a specific Scoop instore).

7. Fill each bottle with Beer using your Brew Bottler leaving about 50mm (5cm/2″) from the top and seal it with either a Crown Seal, PET bottle Cap, or clip the on Grolsh Top.

8. Store your Bottles out of the way in a Warm, Dark place (light Destroys the beer and taste-hence the Amber bottles) for a week before removing to a cooler climate to Mature in. Tasting of your Beer can Happen after 3 – 4 weeks, recommended is 6 weeks but the longer the period the better the taste.

9. Enjoy your home made Hoegaarden Wheat Beer!!

Thanks and Hope you enjoy!
